Yesterday, I had this delightful lunch with one of my officemates when she offered me some of her salad lunch. It consisted of lettuce, tomatoes, carrots, beef (which I shared from my lunch), cheese, and ceasar dressing. It had been so long since since I tasted that salad! *wince*

Because of that, I am now urged to research other salad recipes. HAHA. Being the food lover that I am, I had to take down notes from a recipe book. ^^

6 cups cubed, cooked potatoes

1 unpeeled cucumber, cored, sliced
1 cup shredded carrots
1 tablespoon finely chopped celery
1 1/2 salt or to taste
1/2 teaspoon dill seed
1/2 cup dairy sour cream
Salad dressing

* Toss together potatoes, cucumber, 3/4 cup shredded carrots and celery.

* Mix seasonings with sour cream and dressing. Use enough dressing to moisten well.

* Lightly blend the dressing with vegetable mixture. Chill.

* Garnish with remaining carrots.

* Yield 8 to 10 servings.

Yum! I can’t wait eat salad again! ^^
